- 2 oz (¼ cup) gin
- 1 tablespoon fresh lemon juice
- 1 tablespoon Pink Lady apple simple syrup
- 2 tablespoons pomegranate juice
- Soda water
- Ice
- Pink Lady apples, sliced ¼ inch thick
- Rosemary, for garnish
Method
- Make the Pink Lady apple simple syrup (instructions below).
- Add gin, lemon juice, simple syrup, and pomegranate juice to a shaker filled with ice. Shake well.
- Fill your glass with ice, pomegranate arils, and a few apple slices. Strain in the cocktail and top with soda water.
- Garnish with a sprig of rosemary.
- For a mocktail, simply leave out the gin.
Batch Cocktail
- 2 cups gin
- 6 tablespoons fresh lemon juice
- 6 tablespoons Pink Lady apple simple syrup
- ½ cup pomegranate juice
- Soda water
- Ice
- Pink Lady apples, sliced ¼ inch thick
- Rosemary, for garnish
Method
- Make the simple syrup:
- Place diced Pink Lady apples and 1 cup of water in a medium saucepan over medium heat. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Pour the apple-infused water through a mesh strainer into a measuring cup and discard the apples.
- Return the liquid to the saucepan and add 1 cup sugar. Stir over medium heat until fully dissolved. Let cool.
- Combine all batch ingredients (except soda water and garnishes) in a pitcher and stir to mix.
- To serve, fill glasses with ice, pomegranate arils, and apple slices.
- Add about 2.5 oz of the cocktail mixture and top with soda water.
- Garnish with rosemary and let guests help themselves.
- For the mocktail version, simply leave out the gin.
