Today at the Explore More Discovery Museum kitchen in downtown Harrisonburg, we'll be creating a delicious sausage, apple, and sweet potato sheet pan dinner with Sarah Golibart-Gorman of Friendly City Foodie and our Pink Lady™apples! This allergy-friendly meal (dairy-free and gluten-free) combines protein, vegetables, and carbs all in one pan, making it perfect for busy weeknights with minimal cleanup. Whether enjoyed fresh from the oven or as meal prep throughout the week, this recipe turns simple ingredients into a satisfying and nutritious meal everyone will love.


Sheet Pan Dinner Ingredients:
- 4 Italian chicken sausage links, cut on the bias into ½ in slices
- 2 medium sweet potatoes, chopped into ½ in cubes
- 2 Pink Lady apples, sliced into half moons
- 1 lb bag Brussels sprouts, quartered
- 1 medium red onion, chopped into chunks
- 1 bunch parsley, chopped
- Marinade:
- ¼ cup balsamic vinegar
- 2 tablespoons honey
- ¼ cup olive oil
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
Cooking Instructions:
- Preheat oven to 425.
- Line baking sheet with parchment paper.
- Add marinade ingredients to pint sized mason jar, shake to combine.
- Add sliced sausage, chopped sweet potatoes, sliced apples, quartered brussels sprouts, and onion to a large bowl. Pour in marinade and mix so that everything is evenly coated.
- Bake for 15 minutes, stir and bake for 15-20 more minutes until veggies are easily pierced with a fork and everything is crisped to your liking.
- Sprinkle with parsley and serve.
