Baking a Nectarine Tart with Shenandoah Valley Orchards

Welcome back to Tree to Table with Shenandoah Valley Orchards! This month we are joined by Tristan Williams and Hobart Harvey right here at home at our orchard. We’re here to whip up a tasty No-Bake Nectarine Tart that uses our Yellow Nectarines. Get ready for a taste of summer with this sweet and beautifully balanced treat! 

White and Yellow Nectarines

Originating from Michigan, these fruits are the result of meticulous cross-breeding by a visionary named Paul Friday. These nectarines have been specially designed to thrive in climates prone to late winters and leap frosts, which is perfect for the weather in the Shenandoah Valley. Distinguished by their yellow and white varieties, the nectarines are a harmonious blend of tangy and sweet, creating a balanced explosion of flavors. 

No Bake Nectarine Tart: Capturing the Essence of Summer

Indulge in the delightful balance of flavors as you bite into the creamy cream cheese layer, the sweetness of ripe nectarines, and the subtle notes of apricot and caramel. This No-Bake Nectarine Tart is a showstopper that captures the essence of summer without the need for an oven. Enjoy the fruits of the season in a dessert that's as beautiful as it is delicious.


  • 4 fresh nectarines (yellow or white)
  • 2 cups shortbread cookies
  • 2 tablespoons melted butter
  • 1 block cream cheese
  • 2 tablespoons Bonne Maman apricot preserves
  • Caramel sauce
  • Sugar


Step 1: Preparing the Tart Crust

  • Crush the shortbread cookies until fine.
  • Mix the crushed cookies with melted butter in a bowl until well combined.
  • Press the cookie mixture into a tart pan, forming an even crust on the bottom. Place it in the fridge to cool and set.

Step 2: Adding the Cream Cheese Layer:

  • In a mixing bowl, whip the entire block of cream cheese until smooth and creamy. Spread evenly over the crust.

Step 3: Preparing the Nectarines:

  • Wash and slice the fresh nectarines into thin rounds.
  • Lightly sprinkle sugar over the nectarine slices to enhance their natural sweetness.

Step 4: Assembling the Tart:

  • Spread a thin and even layer of Bonne Maman apricot preserves over the chilled crust.
  • Begin arranging the nectarine slices in a spiral pattern over the cream cheese layer. Start from the outer edge and work your way towards the center.
  • Drizzle a small amount of caramel sauce over the apricot layer for an extra burst of flavor.

Step 5: Chill and Set! 

  • Place the assembled tart in the refrigerator to set for about an hour. This will allow all the layers to meld together and create a harmonious blend of flavors.

Step 6: Serve and Enjoy! 

  • Once fully chilled and set, your No-Bake Nectarine Tart is ready to be savored. Slice it into wedges and serve.
